Currently watching Bad Moms Christmas, which I know it ridiculous since it’s March, whoops. But Bad Moms was hilarious and I wanted something stupid and mindless to watch so here we are…
Update… I turned off the movie. It wasn’t that good? Maybe I’ll try again around next Christmas…
Update #2… somehow turned on the season finale to the bachelor and omg DRAMA.
I should just stop watching tv. Game of Thrones come back to me!!!
SO how’s everybody’s week going? Mine started out pretty rough… worked a super super long day yesterday, which is a hard way to start the week. I’m exhausted and it’s only Tuesday boo. BUT I got a lot of work done so that’s a plus.
Any who, enough about me and my week. Let’s talk about these delicious baked falafel wraps! It took me a few tries to get these little baked falafel morsels perfect but once I did… oh boy were they amazing!
We start with dried chickpeas, which we soak overnight, then pulse them together with onion, jalapeño, garlic, cilantro, and parsley. Next, we mix that pulsed mixture together with almond flour, baking powder, ground cumin, sea salt, and pepper! Finally, roll the mixture up into little falafel balls then bake them in the oven! Pretty simple right?! YEAH. Also, so much flavor.
Feel free to eat these baked falafels by themselves OR make them into a wrap with pita, spinach, red onions, cabbage, sprouts, diced tomatoes, and my favorite avocado cilantro dressing! SO GOOOOOD. Oh and guess what? These baked falafels are dairy free, gluten free, vegetarian, and vegan! Whaaaaa. I KNOW.
Ready for the recipe? Yayyyyy.
baked falafel wraps
- 8 ounces dried chickpeas, soaked overnight then drained
- 1 small white onion, roughly chopped
- 1 jalapeño, seeded and roughly chopped
- 5 garlic cloves
- leaves from 1 bunch cilantro
- leaves from 1 bunch flat parsley
- 1/4 cup almond flour
- 1 teaspoons baking powder
- 1 tablespoon ground cumin
- 2 teaspoons fine sea salt
- 1/2 teaspoon black pepper
- for serving: pita wraps, spinach, sliced red onions, shredded cabbage, sprouts, diced tomatoes, and avocado cilantro sauce (see below)
avocado cilantro sauce
- 1/2 avocado
- 1 garlic clove
- 1/2 jalapeño
- 1/2 cup fresh cilantro leaves
- 1 lime, juiced
- 1 tablespoon tablespoon olive oil
- 1 tablespoon apple cider vinegar
- 1/2 teaspoon ground cumin
- 1/4 teaspoon sea salt
- 1/4 teaspoon black pepper
- 1/4 cup water
- Preheat oven to 400F. Line a baking sheet with parchment paper.
Pulse soaked and drained chickpeas in a food processor until only small bits remain. Transfer pulsed chickpeas to a large bowl. Next, pulse together the white onion, jalapeño, garlic cloves, cilantro, and parsley until finely chopped then transfer the mixture to the bowl with chickpeas. Add almond flour, baking powder, ground cumin, sea salt, and pepper to the bowl then stir to combine. Once the mixture is totally mixed up, scoop out small portions of mixture then roll them into 1-inch balls - should yield about 18 falafels. Line falafel balls on parchment paper lined baking sheet them bake them for 30 minutes, flipping over halfway through.
Enjoy alone or serve as a wrap with pita wraps, spinach, sliced red onions, shredded cabbage, sprouts, diced tomatoes, and avocado cilantro sauce (see below).

Sooo did you watch The Oscars this Sunday?!
What was your favorite Oscar Nom/Winner? Mine is a tie between Shape of Water, The Post (Tom Hanks was robbed of an Oscar nom if you ask me), Lady Bird, and Three Billboards Outside Ebbing Missouri… I couldn’t pick just one!!
Thoughts on Shape of Water winning Best Picture? It was such a beautiful movie. Beautiful story, great acting, fabulous set, etc. Definitely deserved Best Picture in my opinion!! I know some people thought it was overrated but I don’t care. Other amazing movies were…. Darkest Hour, Dunkirk, and I, Tonya! I still need to see Phantom Thread, Call Me By Your Name, Roman J. Israel, Esq., Get Out, All the Money in the World, Mudbound, and The Florida Project!
