If I could eat these mediterranean flatbreads everyday… I WOULD.
The flavors of these mediterranean flatbreads are out of this world GOOD. We start with fluffy naan flatbreads (Stonefire is my favorite) and top them with tzatziki as the base then all of the juicy and delicious toppings like…. shredded chicken (can totally omit if vegetarian), baby spinach, roasted bell peppers, diced beets, and crumbled feta. Feel free to add pitted olives as well. Then we bake everything up to perfection and it’s freaking heaven.
I love an easy dinner recipe so to eliminate time prepping, I chose to use jarred roasted red peppers and ready-to-eat beets in vinegar rather than buying and cooking peppers and beets myself. Love Beets is one of my favorite brands! Their beets come ready-to-eat with different flavor options and are literally like candy. Buying these pre-prep items makes making these mediterranean flatbreads a BREEZE. Another thing you can do to make this dinner easier is to buy rotisserie chicken rather than cooking and shredding your own chicken breasts. You do you though! Recipe time!

Ingredients
- 1 lb boneless, skinless chicken breast; cooked and shredded (can totally omit if vegetarian)
- 4 naan flatbreads (Stonefire are the best)
- 1 (12oz) container of tzatziki
- 1-2 cups baby spinach leaves
- 1 (12oz) jar roasted red peppers, drained and thinly sliced
- 1 (6.5oz) container of ready-to eat beets in vinegar, diced (I’m obsessed with Love Beets)
- 4 oz crumbled feta or goat cheese
- healthy pinch salt, pepper, and garlic powder
Instructions
- Cook the chicken your preferred method and shred it (or grab a rotisserie chicken from the store). I love throwing my chicken breasts in the instant pot then cover with water and cook on high pressure for 12ish minutes.
- Preheat your oven to 350F. Line two baking sheets with parchment paper.
- Place two flatbreads on each baking sheet.
Top each flatbread with about 3 tablespoons of tzatziki (leaving an inch tzatziki free as the crust), a few spinach leaves, 1/4 lb shredded chicken, roasted red pepper slices, diced beets, crumbled feta or goat cheese and a healthy pinch of salt, pepper, and garlic powder.
- Place flatbreads in the oven to bake for about 20 minutes or until the crust is golden and cheese is melted.
- Remove flatbreads from the oven then slice and serve!
