Though, I am slightly sorry (but really not sorry) for making a vegan taco casserole BUT Y’ALL IT’S SO GOOD. And super easy and fast because we use the best invention ever… THE INSTANT POT. Do you have an Instant Pot?! I got one last Christmas and it’s a serious game changer. Not only can you make awesome one pot meals like this tasty vegan taco casserole or this creamy rice soup but it’s also fab for meal prepping and quick cooking things like poaching frozen chicken, hard boiling eggs, cooking rice, etc.
Have I sold you on the Instant Pot yet?! Well if not, you should get it just to make this amazinggggg vegan taco casserole because… we’ve got diced sweet potatoes, onions, lots of spices, salsa, bulgur (my favorite new grain!!), black beans, and bell peppers pressurized into a fantastic VEGAN taco casserole. YUM!
Ready for the recipe?! I thought so.
VEGAN “TACO” CASSEROLE
Ingredients
- 2 tablespoons olive oil
- 1 ½ lbs sweet potato, peeled and cubed
- 1 medium sweet onion, diced
- 4 garlic cloves, minced
- 1 tablespoon chili powder
- 1 tablespoon ground cumin
- healthy pinch fine sea salt and black pepper
- 1 cup water
- 16 oz prepared salsa
- 1 cup bulgur
- 2 red bell peppers; cored, seeded, and diced
- 1 (14-15 oz) can black beans, drained and rinsed
- optional serving accessories: mixed greens, avocado slices, fresh cilantro, diced tomatoes, and sliced green onions
Instructions
- Set your Instant Pot to the sauté setting. Once hot, add the olive oil, sweet potato, onion, garlic, chili powder, cumin, sea salt, and pepper then stir to combine. Sauté mixture about 10 minute, stirring occasionally with a wooden spoon. Press cancel to stop the cooking cycle.
- Add water and salsa to the Instant Pot then mix until well incorporated, making sure that nothing is stuck on the bottom of the pot. Without stirring, sprinkle the bulgur over the mixture then top with diced bell pepper and black beans. Secure the lid and move the steam release valve to sealing. Select the Manual/Pressure Cook setting to cook on high pressure for 4 minutes.
- When the cooking cycle is complete, let the pressure release naturally or by opening value. When the floating valve drops, remove the lid. Stir the mixture well, then taste and adjust the seasonings as needed.
- Serve over mixed greens (or by itself) then top with avocado slices, fresh cilantro, diced tomatoes, and sliced green onions >> enjoy!
GUYS I FINALLY GOT THROUGH SEASON ONE OF PARKS AND REC AND YOU WERE RIGHT. It’s hilarious. Seriously, I’m so glad that I stuck with it. I’m currently on season four and I cannot get enough.
Also, I got a new MacBook Air last night and I’m obsessed!!!! I currently have an iMac, that I adore and use for photo/video editing, but my current laptop situation is an 8 year old MacBook Pro with a broken track pad, broken USB port, and broken battery (aka it has to be plugged in at all times) so I was long over due for a new laptop. This is seriously going to change my blogging game since I can now WORK ON THE GO. BEST DAY EVER AND OMG I’M IN HEAVEN.
