pear, goat cheese, & caramelized onion prosciutto cups

Ingredients

  • 1/4 cup caramelized onions (ingredients and recipe below)
  • 6 oz prosciutto slices, sliced into 3rds lengthwise (yielding three 1 ½ by 2 inch rectangles per slice of prosciutto)
  • 1 pear, cored and diced
  • 3 oz goat cheese, crumbled
  • 1/2 lemon, juiced
  • dried rosemary

caramelized onions

  • 1 tablespoon unsalted butter
  • 1/2 yellow onion, peeled and sliced thinly
  • healthy pinch of sea salt and black pepper

Instructions

  1. Preheat oven to 375F.
  2. Caramelize your onions: Melt butter in a saucepan or deep skillet over medium heat until sizzling. Add onions and cook until translucent, about 1 minute. Add a healthy pinch of sea salt and black pepper to the onions, stir to combine, reduce heat to medium low then cook the onions for 20-25 minutes (stirring occasionally) until they turn brown and start to crisp up on the edges. Remove from heat and set aside.

  3. While the onions are caramelizing, place one prosciutto rectangle in each cup of a mini cupcake tin. Bake at 375F for 10-15 minutes or until the fat turns golden and the prosciutto is crispy. Using a fork, remove prosciutto cups from the mini cupcake tin and transfer them to a paper towel to absorb excess grease.

  4. In a small bowl, combine diced pear and lemon juice then stir to combine.

  5. Assemble: Fill crispy prosciutto cups with a slice or two of the caramelized onions, a crumble of goat cheese, and 1-2 pieces of diced pear. Garnish with a sprinkle of dried rosemary and enjoy!
