apple cabbage slaw salad

Ingredients

  • ½ large green cabbage, shredded or spiralized
  • 2 red apples, cored and diced
  • 1 cup thinly sliced celery
  • 2 cups sliced red grapes
  • 1 cup sliced almonds + extra for garnish
  • 1/3 cup mayo
  • 3 tablespoons dijon mustard
  • 2 tablespoons lemon juice
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon fine sea salt
  • ½ teaspoon black pepper

Instructions

  1. Add shredded cabbage, diced apples, sliced celery, sliced grapes, and almonds to a large bowl. Stir to combine. Whisk together mayo, dijon, lemon juice, apple cider vinegar, and salt + pepper in a small bowl. *Pour mayo mixture over cabbage mixture then toss to combine. ENJOY.

*If planning to eat this through the week, wait to toss the cabbage mixture in the mayo mixture until the day before eating each section!
