I have a waffle obsession… I got a waffle maker for Christmas and I’m pretty sure Tom and I have had waffles every weekend morning since… Whoops! Usually, I stick to the standard Bisquick recipe or occasionally I’ll throw in some chocolate chips to make Tom happy, but this time I wanted to branch out. I had some super ripe bananas that I needed to use ASAP. Normally I would make banana bread or muffins but then I thought…. What about banana bread waffles?! Genius.
Brunch is one of my favorite meals and these waffles are a HUGE hit in my house. Not to mention, they are sooooo easy to make and double or triple for large groups! Top them off with lots of butter and syrup and I promise you won’t be disappointed.
Recipe time:
banana bread waffles
Ingredients
- 1/2 cup whole wheat flour
- 1/3 cup oat flour oats blended in a food processor = oat flour
- 1/4 tsp ground cinnamon
- 1/4 tsp salt
- 1 1/2 tsp baking powder
- 1 tbsp brown sugar
- 1 tbsp sugar
- 1 tsp vanilla extract
- 1 ripe banana mashed (peeled too of course…)
- 1 tsp vegetable oil
- 1/2 cup almond milk
- 1 egg
- butter and syrup
Instructions
- Mix together the first 7 ingredients in a medium sized bowl. Add in the vanilla, banana, oil, milk and egg – whisk together
- Heat up the waffle iron to your preferred setting. Scoop the batter onto the waffle iron and cook according to the waffle iron’s directions until golden brown.
- Top with a little bit of butter and syrup then eat eat eat!!!
